Eastern Stars

This was a recipe my Little Pet invented over 15 years ago at secondary school for a Year 8 cookbook.  It was really easy to make then, and we were happy to discover, it is still really easy to make and very delummy.

Ingredients

  • 10g cooking chocolate
  • 85g cocoa (or drinking chocolate if you don’t want it sooooo cocoa-ie)
  • 85g plain flour
  • 85g butter
  • 85g Demerara sugar
  • a pinch of salt
  • 1 generous pawful of desiccated coconut
  • 7 or more cashew nuts – chopped
  • 7 pods of cardamom (de-podded)
  • Boiled water – enough to make a paste
  • Pre-heat oven to GM 4

Instucktions

(NB: That’s how cats say, ‘instructions’, I’m not sure why, but it’s true).  If your paws are up to it, you can mix it in a bowl, or else in a mixer should be fine too (as long as you don’t over mix it).

  1. Melt the cooking chocolate in a bain marie (in a bowl over hot water)
  2. Add in the cocoa and the water to make a paste
  3. Then carefully bung in the flour, soft butter, sugar and salt.
  4. Add the nuts, cardamom and coconut.  And make into a dough.
  5. Roll out to about 1/2 inch.
  6. Cut using nice star shape cutters.
  7. Bake in the oven on GM 4 for 20-30 minutes, or until cooked through.

Allow to cool, or don’t resist and helpful yourself immediately!
